That actually looks very tasty. I'm sure if McDonalds came out with a foie gras burger it would be a top seller.

Gerry1of1 The thought of eating McDonald's makes me throw up a little in my mouth. But to be honest if they did put out a McFaux Gras I would have to try it.

I also love liver.  My wife never liked it before we met. Her dad was a butcher and would always come home with old beef liver.  The first time I cooked it for here I got young goat liver, soaked it in Dry Marsala for about four hours. Fried some bacon, until crispy, in a cast iron skillet, removed the bacon, then fried onion and mushroom in the pan. Drained the liver keeping a little of the liquid.  Threw some salt and freshly ground pepper on the liver, dredged it in flour then fried it in the pan until less than rare.  Add the saved liquid and reduce to make a gravy -- adding a little hot sauce for acid or just a nice cider vinegar. Chopped the onion added it to the gravy and set aside. Getting the skillet nice and hot I sliced the liver into quarter inch slices -- with the blood just slightly flowing out of the pieces.  I flash fried the them in the hellishly hot pan -- just enough to cauterize the wound on each side and get just a kiss of burnt on the thin parts. Served it on a plate like I had a winning poker hand.  Put a few lines of sauce over the liver with the crispy bacon on top.  No side, no starch, just liver.  Now we have liver once a week.
