Here's the deal: Models of 5 lbs and 1 lb of both fat and muscle are sold online. They're supposed to be used for educational purposes at gyms and weight-loss centers. For this pic, someone's taken the 1 lb model of muscle and put it next to the 5 lb model of fat. Here's a pic of the models off Amazon:
