Monday, April 25, 2011 1:54:20 PM I had rabbit once, at a restaurant in Prague. It was just ok, nothing more. Perhaps it was how it was cooked. I'm not a huge fan of it baked. My favorite is cooked in a slow cooker. My wife calls it "Russian Rabbit". Not sure of the ingredients (besides the rabbit obviously) but it is really good. She has another recipe that she uses in the slow cooker as well. That too is very good. |

People used to eat rabbit here all the time, and some kids would have rabbit farms in their back yards and added to the household. But that was 25 years ago. Nobody does it anymore. |

Sunday, April 24, 2011 10:50:50 AM 7435 Posts Sunday, April 24, 2011 9:58:29 AM Creamy Rabbit Casserole ~ 2 rabbits cut into pieces ~ 5 tbsp butter ~ 1 medium onion, chopped ~ 1 1/2 cups heavy cream ~ 1/3 cup vinegar ~ salt and pepper to taste ~ 1/2 tsp thyme In a Dutch oven melt 3 Tbsp butter and brown the rabbit pieces. Remove and set aside. Add remaining 2 Tbsp butter and saute onion till clear. Return rabbit to pan. Mix remaining ingredients and pour half of this over rabbit. Cover and simmer over very low heat for 1 hour. Skim off fat and add remaining cream mixture. Heat gently for 10 minutes until sauce thickens. Serve and Enjoy! Hell yeah Gary! Bet it's good with squirrel too! |
