The steam escaping is what launched it up, The crack in the hull then spreads and then the germ and endosperm explode outwards peeling back toward the tip cap.

What's weird is that it popped up in the air a fair bit before the explosiony part seemed to actually happen. I wonder how it did that.
I think what sent it flying was the oil popping. You know how if you put just about anything on oil it will cause it to start boiling when it's hot enough.
That still doesn't explain why it takes a second afterwards for the corn itself to pop... Maybe the fact that once it's in the air it's not in direct contact with a heat source, so it...
