A "salamander" or "cheese melter", as it is often used for is also a form of broiling. A grill is often referred to as a "flat top", although technical incorrect because a "flat top" can also be a defused closed top cooking surface and can cause confusion in a classic kitchen. To grill the heat source simple needs to be located under the product and cooked with direct heat either on a flat or ridged cooked service but, the product is never exposed directly to the heat source.The whole history behind the terminology is basically before gas or electronic heat sources there was wood or coal and unlike the popularity of smoked food today it was considered to be undesirable for food to have a smokey or coal like taste. In the USA we have broilers in the bottom of our ovens that cook at very high temps and cook the food under the heat instead of over it. |

WTF is "Broils"? Is that even a method of cooking food? Broiling? What is that? It's clearly not Boiling. (stewing in boiling water until cooked). What does the extra "R" do to make it Broiling? Wouldn't it be easier just to call it "Grilled". That's what it is, right? Grilling? Or am I missing something? |
