The Earth's diameter is 7,918 Miles, Mt. Everst is approximately 5.5 miles above Sea Level and the Marianna trench is approximately 6.8 miles below sea level.

Even without oceans Earth comparatively would be smoother than a Cue Ball albeit not as round since there is a slight bulge in the middle.

And one more fact, the deepest we have ever drilled into the earth would be less than the thickness of the skin on an apple.

An image without a source or explanation is pretty useless.

This is the visual equivalent of the phase: "Look how High."
Meaningless without context.

I don't think it has anything to do with water. It is a representation of the gravity surface anomaly from an oblate spheroid. Possibly based upon the WGS84 as it is pretty close to zero in North America. Anomaly exaggerated to a huge degree of course on the model, but represented by the colours.

I don't think that`s meant to be a physical model.

It looks like a temperature graph showing deviation from average.
