@Sminky: Unfortunately, I suspect you haven't had a good bagel just yet. In fact, the bagels you`ve had up to now may have been frozen at one point (blecch).

Here are the hallmarks of a good bagel: The outside has a crust that crackles when you bite into it, with little air bubbles formed when it was cooked in the salt water and then, still wet, thrown into the oven. The inside should be chewy, have a wonderful yeasty aroma, and warm. A good bagel is delicious plain, and absolute heaven when toasted.

For my lunch today, I found a local place that makes good bagels (not Brooklyn good, but certainly passable). I had one salt bagel, one egg bagel, both toasted and with shmears of lox cream cheese. Yes! =^.^=
