Re: Karat - It could happen accidentally by using a too-small pot and expecting the pasta to collapse into the pot as the boiling water softens it (which is a legit strategy). The cook made the two mistakes of a: adding the pasta to the pot at the beginning instead of after the water boiled, thus keeping it stiff much longer, while b: using a gas stove with the flame turned up too high, which scorched the ends of the spaghetti that hung out over the edge of the pot.
