most restaurants that expect to have clientele who *don't* realise that gratuity is compulsory will have some sort of notice printed on the menu. higher class restaurants have a clientele who know that it will be included and typically don`t have any notification.
with the prices on that receipt i`d say if mr manning wasn`t expecting a compusory gratuity then he had ideas above his station and should go back to the olive garden.

My friend works in fine dining and has celebrities come in all the time (it is L.A.) and when Oprah came in she left a $1800 tip on a $1800 check. That's F-ng awesome but the tips are pooled. Still though.
