I like a lot of music from both genres and there is plenty of scope for crossover, but every time I've heard them mashed together the result is less than either.

If someone composes a piece deliberately as symphonic metal (or operatic metal, or whatever), it can work very well (e.g. Wishmaster), but mashing them together is usually like mixing tea and coffee. The individual ingredients may both be great, but the result isn`t. Although, of course, some people might like coftea.
