"the only different between african-american and caucasian skin is the gene that puts out the amount of melanin"
No. There's more difference than a single gene between my skin color and the skin color of my brother. There`s about 5 gene pairs inherited per parent (give or take, depending on race). The combined 10 gene pairs have thousands of combinations that can alter the appearance of skin.

the only different between african-american and caucasian skin is the gene that puts out the amount of melanin. which i thought was just a single gene,
No, it's not that simple.
Which is a good summary of genetics, really. Find an answer, look in more detail and find that it`s not that simple.
If I recall correctly, about a dozen genes are involved in human skin colour. At least, that`s what is currently thought. It probably isn`t that simple.
