Ammonium sulfate is definitely not salt. The chemical name for what we commonly call salt is sodium chloride, which means it's made of sodium and chlorine, not ammonia and sulphur.
Ammonium Sulfate IS in fact a salt. It is an inorganic substance with two ammonium cations and one sulfate anion bonded together ionically, hence forming a salt based on the definition of a salt.

The calf rennet in cheese, is just how cheese is made. there is such a thing as vegetable rennet, but thats a modern intervention.

But you may still have a point in calling BS in that it`s just a chemical, which obviously has multiple applications, not just as a fertilizer.
