I eat lamp and enjoy it.
But the whole vid these two were standing around what looked like a docile, trusting animal & talked about EATING it. was stomach churning.

It is, to begin with. It`s a naturally occuring mutation that either reduces the level of myostatin or reduces the amount which is used (I forget which). Myostatin is, roughly speaking, the body`s "enough muscle" flag. Less myostatin, more muscle.

The human intervention is simply selective breeding. The mutation occurs naturally in a few species, now including humans (1 known case only).

There`s a drug undergoing human trials right now which produces the same effect without the genetic mutation (the drug binds to myostatin, which stops it being used). It`s intended to treat muscular dystrophy and wastage, but it`s going to leak into the black market at some point. It`s far more effective than steroids and doesn`t seem to have any side effects at sane doses.

schuey63 Yes,fat is really important to add taste on the meat. If you have only muscle without fat the meat become hard and tasteless once cooked.

you`re not going to get a proper fat marbling through that meat so it`s taste isn`t going to be as good as normally bread cows.
