Also you could just put it in the oven on a baking rack over a pan to catch drippings at 350...or flip in a pan over and over again...I guess

I disagree. Just cause it looks the same as it does in the package doesn`t mean it`s better. I actually like bacon cooked "the wrong way". It`s good.

I like crunchy bacon. I also like my bacon wavy. His bacon looked flat like the pre-cooked stuff that comes from Oscar Meyer or whatever. But I guess I`m wrong. I mean he *had* a green "Right" stamp.

Just cooked it his way and it came out pretty perfect!! The chewyness was still there. I still like frying it fast though, it`s chewy then too only it`s all bubbly instead of flat.

I like frying bacon on the griddle and then cooking the eggs or flapjacks right after draining the excess grease. Yum.

Dude. It`s the hot fat that cooks the bacon, not the surface of the pan. Hence: Frying bacon.

At least he`s right about the low heat.

@wtmac and Mailbox:
use the oven method, it`ll take 20-25 minutes to cook, you shower while its baking, as long as you`re not a woman about your shower, it won`t burn.

@ajmullan:
you did it half right, next time bake it with the brown sugar, you`ll never eat bacon another way again

I agree with the oven method. If you`re using a pan, it`s the wrong way. :P
I usually buy it already cooked. It`s often the same price to get cooked bacon as raw bacon where I live, and all you have to do is heat it up in the microwave for about a minute. (same for oven baked. If it`s cheaper raw, I bake about 2-3 pounds at a time and put what remains after everyone attacks the freshly baked stuff, in the fridge.)

I get club sandwiches from this sandwich joint downtown where they have the best damn bacon I`ve ever had. When I asked them what their secret is and they said "it`s no secret - we deep fry it."

I was shocked at first, but then...it made sense. Everything is better deep fried.

Being a drating food professional I know a thing or two. I like the cast iron pan, and he is doing it all right, but put it in the oven at 350 (Fahrenheit) on a sheet pan with parchment and you will have the best drating bacon with the least amount of work. That`s how us restaurant folk do it and we know what were doing.

Cook the damn things on med-high and turn over often, never overlapping. Have the eggs & milk already mixed to pour in seconds after bacon is on the paper towels (use paper towels to soak up extra fat with spatula before adding eggs). Perfect eggs&bacon every time! Feeds 3 at a time, repeat as needed for # of ppl.

I`m with craker, I ALWAYS bake my bacon

cover baking sheet with foil (use cookie sheet that has a lip around it)
place metal cooling rack on sheet pan - spray with cooking spray
preheat over to 350
lay out bacon (I can fit 3/4 lb or 10 strips)
sprinkle brown sugar onto bacon
bake in oven 25 minutes (don`t flip)

perfect, tender, slightly sweetened bacon. also, if your grocery store has a butcher, get fresh sliced bacon, so delicious

I call bullsh*t. Agree that you shouldn`t overload the pan, but a med-high heat is the way to go. And when he says never pour out the juice, cause you`re pouring off the fat? Most bacon (at least, the cheap stuff) has >20% added water. That`s the stuff that renders out of the bacon first, before the fat does. When you see your bacon lying in a deep puddle of liquid when it starts to cook, most of that is water, which means you`re boiling your bacon, not frying it. And boiled bacon is as nasty as it sounds.

Pour off the first set of liquid that comes off, cause it`s mostly water anyway. Don`t worry that the pan now looks dry, actual fat will render out of the bacon and will actually fry it (rather than boiling it, like I said), making it crispy and crunchy and tasty and delicious.

My mum`s a professional chef, she taught me all she knows. What buddy says is against anything you`ll ever read in a book of classical french cookery.

@littleyoyo and kribbe - actually, that doesn`t surprise me given that my sister burnt KD in the microwave a few years ago. I do know a lot of young adults (20-30) who can`t cook a meal to save their soul. It`s actually kind of sad to think about it.
I usually just microwave it and presto, bacon in a minute and a half.
That wrong, just wrong.

OT:
Thats not the way i`d like my bacon, i want the meaty bacon not the streaky for my sandwich. Also far too crispy for my taste.
What is this sudden obsession with bacon nowadays?
Whilst i was living in halls for Uni, every shelf in our fridges had a pack of bacon on it, or atleast every fridge. Nearly everyone after a night out when getting back or after waking up would cook up a bacon sandwich. The blocks favourite seemed to be with a fried egg (yolk still runny) and a third slice of bread was fried for the middle.

Wish i hadn`t finished my bacon for dinner =[

For most of my life, I enjoyed bacon, but couldn`t understand some people`s obsession with it. Then I learned how to cook bacon well. It is so good. I usually use the oven, but this way has the same effect: the bacon isn`t rubbery and it isn`t crumbly. Perfect.

BoeZO, did you grow up in a cave? "Sudden obsession with bacon"?

If you, as I did, ate bacon as a child, you would understand the beauty and pleasure of well made bacon. This obsession has existed since before I was born, and lasted as long as I can recall, so I wouldn`t call it sudden, or even an obsession, as much as a long-lasting love.
