Apparently they have not yet acquired "move the grill closer to the counter" technology.

I think Saskuel is probably right... If you count "One and two and three and four and" with 1 + 2 in tempo with the the clicks then his motions align

"Saskuel: to keep the beat going. He`s concentrated and in the zone. That`s why he hits it on the counter. Smack-smack bam throw, smack-smack bam throw, smack-smack bam throw etc... 4/4"

Also he could be warning the catcher that he is about to throw it. The first bang coincides with the throw I`d think.

Maybe throwing the dough is part of the process. Why change it if it`s cool and it works?

On the side of a street in China, I saw this family of 3 boys + 2 parents with a dumpling restaurant. They churned out 2 dumplings per second. The mom was the waitress, the dad did the cooking. The three kids somehow managed to chop, dice, mince, roll and fold dumplings in an assembly line super fast.

why does he keep hitting the rolling pin on the counter? Whats the point of this?

Why dont they just roll out the dough at the grill thing? It`s not like he needs a special table to use a rolling pin.

Even easier - move the counter closer to the grill. You know they must drop one SOMETIMES. You think they throw out the one they dropped, or just pick it up and fry it and serve it to YOU?

What is this guy doing rolling bread dough? He should become an entertainer. He`s got hell-of-a-lot more talent than most people in the medida....
Whatever, he probably makes kick-ass bread.

This is why I choose to eat those things rather than fast food when I`m back in my country... Dinner and entertainment... Beats Las Vegas...
Cool how he keeps rhythm with the roller
That`s not for rhythm; that`s to signal the catcher that there`s one on the way.

Why?

Because this is skilled work, not Pizza Hut.

They could move the grill closer to the counter.
They could transport the pastry there.
But no.
They chose to be AWESOME.
