I make a chili con queso using two Habenero(scotch bonnet) peppers (max @350K Scovilles). I am afraid to poop to for a couple of days after consuming it.

That`s amazing, I love peppers, but this woman is crazy rubbing them in her eye`s like that... and what`s the deal with the Woman from Africa eating only 7 jalepenos and getting the record... that`s just sad I think I ate more than that with my dinner last night, lol.

Has anyone here ever eaten a ghost chilli? I took a bite of one once (didn`t actually swallow some) and the juices from the chilli burnt my lips and tongue so badly, I nearly had to go to hospital. I was sat with an ice-pack on my mouth for about half hour and it was still tingling. I also had a huge rash on my lip the next day. Trust me, they are REALLY hot. I can`t even describe it.

How on earth she ate 58 in two minutes it beyond me. I surprised they didn`t kill her.

Okay, capsaicin is what makes chilies hot, but acid can make it hotter. Capsaicin is a fatty ester and not water soluble, so it tends to form small globules in water-based foods. Acidic foods, such as tomato and vinegar, will cause those globules to break down into smaller globules thereby increasing their total surface area thereby increasing the effective hotness. That`s why homemade salsa gets hotter after it sits in the refrigerator for a few days. Also, acid is itself an irritant, so it can contribute to the hotness.

It has nothing to do with acidity stupid poo. It is capsaicin, the chemical in chili`s that your brain interpenetrates as heat when it hits your tounge, and the only real way to deter the pain is to drink dairy because the fat in dairy reduces the potency of capsaicin.

Seriously stupid everybody is suppose to know that.

Chilies burn because of capsaicin, a chemical irritant. Acidity has nothing to do with it.
