This type of shrimp lives extremely deep in the worlds oceans; much like the angler (the fish from Finding Nemo with the light on a little `branch`-like appendage) where the fish see via Ultra-violet light and some more visible to us. Shooting out a black ink jet in the depths of the ocean would do nothing, as black only obscures the visible portion of the spectrum we see. Under Ultra-violet the cloud wouldn`t even be seen, so thus the shrimp has evolved to react with UV light so that when it`s being chased it sputs out this UV reactive ink and thus blinds the light-sensative eyes of their prey.
So yes; They exist. (and google confirms)
